American Meatloaf
Nothing else makes you feel comfortable as meat loaf. It is a classic American invention, a substitute for fancy pate', put together easily with scraps of meats.
Nowadays, it is hard to find in a restaurant. To have a thick slice of meatloaf, mashed potatoes, gravy and green beans, you need to cook your own, and freeze any leftovers for days when you are hankering for comfort food.
Ingredients:
2lbs of ground chuck or other ground meat
1lb of pork sausage
1 3/4 C of bread crumbs, saltine crumbs or oatmeal flakes
1C chopped parsley
3/4 C Worcestershire Sauce (Lea & Perrins)
3 eggs
1 C chopped onions
2T garlic salt
1T ground pepper
3 strips of bacon or 3T of BBQ sauce
Combine all ingredients except the bacon. Press down into a loaf pan; Add the bacon strips across the top or the BBQ sauce.
Bake at 350F for one hour and twenty minutes.
Cool in the pan. Tip the pan and remove the drippings. You can use these to make gravy for your mashed potatoes.
Slice and serve the loaf with mashed potatoes, gravy, and your favorite vegetables.
Or, make sandwiches, with arugula, a dab of BBQ sauce.
If you have any leftovers, freeze in single servings.
